I do just that. The time I spend practicing double bass (using Bill's book in particular, or just practicing DB in general) is so I can be at least somewhat prepared for my students - the gigs I get don't really call for double bass work.
Even my students who are playing a double bass pedal, I have them do some of the exercises with left foot on hi-hat, or on a block or bell played with the left foot. There are some exercises in Bill's book that benefit from having each foot produce a distinct sound - phrases where both feet play in unison, or where the same rhythm is played using different "stickings."
